Steps
Step 1
Preheat the oven to 180°C (350°F).
Step 2
Prepare the zucchinis:
• Cut off the tops (keep them as “lids”).
• Scoop out the inside with a spoon, leaving about 1 cm (½ inch) of flesh so they hold their shape.
• Lightly salt the inside and set aside.
Step 3
Prepare the stuffing:
• In a bowl, mix the veal, beef, onion, garlic, parsley, egg, breadcrumbs (if using), salt, and pepper.
Step 4
Stuff the zucchinis:
• Fill each zucchini with the raw meat mixture (don’t pack too tightly).
• Place them in a baking dish, drizzle with a little olive oil, and put the “lids” back on top.
Step 5
Bake:
• Cover with foil and bake for 45 to 50 minutes at 180°C (350°F).
• Uncover for the last 10–15 minutes so the top browns nicely.
• If you like, sprinkle some cheese on top and let it gratinate.
Step 6
Serve hot, warm, or even reheated the next day they’re delicious once the flavors have settles.
