Gluten Free Date and Banana Bread
Ingredients
4 individual bananas
2 medium eggs
2 tablespoons date nectars
8 individual dates
1 / 2 cups coconut flours
2 teaspoons baking powder
Steps
Step 1
Preheat oven to 180C, around gas mark 7. Line a 10x5cm loaf with with baking paper.
Step 2
Mash bananas in a large mixing bowl. Add eggs and date nectar and whisk lightly with a fork.
Step 3
Sift in coconut flour and baking powder and mix gently to combine. Stir through chopped dates.
Step 4
Pour mixture into loaf tin, top with banana slices or chopped nuts. Bake in the centre of the oven for 45-50 minutes. Insert a toothpick into the middle of the banana bread and if it comes out clean then itโ€™s ready to go ๐Ÿ˜‹
Step 5
Allow to cool for at least 15 minutes before slicing!
