Sugar Free Thumbprint Cookies
Ingredients
3 / 4 cups coconut flour
1 / 4 cups arrowroot powder
1 / 2 cups coconut oil
1 scoop paleo valley protein powder, vanilla flavor
1 teaspoon vanilla extract
12 tablespoons jam of choices
Steps
Step 1
Preheat oven to 350 degrees. Line a baking sheet with parchment paper.
Step 2
Mix together the dry ingredients, then stir the wet ingredients in until combined.
Step 3
Using a tbsp sized scoop, scoop the dough and roll into balls. Set the balls of dough onto the baking sheet and use your thumb to press an indentation into the center of each.
Step 4
Scoop about 1 tsp. jam into the center of each cookie.
Step 5
Bake for 10-12 minutes or until lightly golden. Watch for burning.
Step 6
Transfer to a cooking rack and let cool. Enjoy!
