2 tablespoons olive oil
salt
freshly ground pepper
fresh thyme
200 grams brie cheeses
1 tablespoon honey

Steps
Step 1
Preheat oven to 400°F (200°C).
Step 2
Line a baking tray with parchment paper. Arrange the pumpkin slices and drizzle with olive oil. Season with salt, pepper, and herbs.
Step 3
Roast for about 25–30 minutes, turning halfway, until tender and slightly caramelized.
Step 4
Add the brie slices on top of the warm pumpkin and return to the oven for 3–5 minutes, just until the cheese starts to melt.
Step 5
Drizzle with a touch of honey or maple syrup, sprinkle nuts if you like, and serve warm 🤍
