Steps
Step 1
Off the heat, mix mloukhiya powder with olive oil until smooth.
Step 2
Whisk in the hot water little by little to avoid lumps.
Step 3
Add beef, garlic, bay leaves, cumin, coriander (or caraway), paprika, ras el hanout, salt & pepper. (Optional: add marrow bones, Harissa .)
Step 4
Bring to a simmer, then cover and cook on very low heat for 4-6 hours, until sauce is dark and glossy and meat is very tender.
Step 5
Serve hot with fresh bread to dip in the sauce.
