10 Folds Bread
Ingredients
500 grams white flour
55 grams dry yeast
10 grams salt
1 to taste super seeds
350 milliliters water
Steps
Step 1
Cover a baking sheet with wax paper and put it aside.
Step 2
In a big bowl mix the flour, dry yeast, grains blend and salt. Add the water (make sure it's not too hot) and mix everything well. Cover the bowl and let it rise for 10 minutes.
Step 3
Now you'll need to make notes: 10 minutes 10 folds x 4. Every 10 minutes wet your hands and fold the dough 10 times. You don't need to knead the bread!
Step 4
After doing this 4 times cover it again and let it rise for another hour. In this step I cut my dough in half but you can make one big loaf.
Step 5
The dough will double the size, now it's time to shape it as desired and place it on the prepared baking sheet. Let it rise for another 45 minutes.
Step 6
Preheat the oven at 220 Celsius. Making shallow cuts in the dough (scoring) right before baking it is a very important step. It allows the dough to expand as it bakes.
Step 7
Bake it at 220C with a lid or covered with aluminum foil for 25 minutes and for another 20 minutes uncovered.
